We see the garden as an essential element in the reinvention of the restaurant profession.

It embodies our sustainable partnership with nature, bringing us into balance with the environment. We believe that any green space has the potential to produce food if it is cultivated responsibly and sustainably. We chose to reduce the size of our parking lot to extend this ecosystem which is gradually taking shape over more than 1,500m², with trees, flowers, shrubs and medicinal plants used by the druids in ancient times.

The parking lot is the first thing guests see when they arrive at the hotel. We replaced 12 of its parking spots with green spaces.

We are restoring and reintroducing hedgerows and planting berry bushes along their ridges, and have built permaculture greenhouses. The plants that we grow here are included in the dishes we serve as well as in our herbal teas. In the future, we plan to use them as ingredients in our spa products.

Our liorzh reinvigorates and inspires our staff as well as our guests. It is a place for visiting, tasting, and learning.

In the future, we hope to acquire some neighbouring fields to make room for a vegetable grower who would like to transition to organic production. In this way, we would be able to lend a helping hand to a farming family who shares our commitments.

Our garden is also an open-air laboratory where we try to create natural adaptations to our environmental conditions. For wind protection, we have planted protective hedges, and for watering needs, we store rainwater. As for pollination, we are hosting beehives on the property. In the future, we hope to install rooftop gardens to bolster biodiversity and improve energy efficiency.

Brittany is home to many people who are passionate about the world of plants.

To design and plant our garden, we invited two of them to combine their skills: garden designer Jeanne Ried planned the garden layout, and grower Paul Baron produces what we enjoy on our plates.
